Plate Ribs are essentially a large slab of Short Ribs. They are cut from the rib section near the brisket and are known for their insane marbling. Some call them “brisket on a stick” and they are often referred to as “the best bite in BBQ." Plate Ribs are more forgiving than a brisket for novice pit masters and yield an incredibly juicy and rich bite.

Make for a very rich meal! 

American Wagyu Plate Ribs are one of the most flavorful cuts of beef for BBQ.  Plate Ribs are known to melt in your mouth when cooked low and slow. The collagen, marbled fat, and gelatin in the bones melt together mingling with the beef, making each bite extraordinarily moist and savory. The result is meat that is so tender it is cut with a fork. 


 Wagyu short ribs are one of our most distinctive products. This distinctive cut is a special-order cut.  BBQr's like to call them "dinosaur ribs" because of their massive size and primal appearance. Other names Plate Ribs are known as: Flanken-Style Ribs, Short Ribs, Short Ribs-Frenched, Pony Bock Ribs. 

Our meat is dry aged for 21 days, the beef’s flavor and tenderness intensifies as it takes on more of the dry-aged qualities.

Where does the Plate Ribs come from? 

Wagyu Plate Ribs are cut from the lower rib primal. They are located next to the cage closest to the breastplate near the shoulder.

Plate ribs contain two to five ribs but typically contain four ribs. The primary muscle that makes up short ribs is the serratus ventralis.
